Nutrient-Packed Tofu Stir Fry (Ve)

1 min read

This vibrant vegan stir-fry isn’t just delicious—it’s a wholesome, plant-based dish packed with nourishing, whole-food ingredients to support overall wellness, but in particular, prostate health.

Tofu’s isoflavones, broccoli’s sulforaphane, and tomatoes’ lycopene create a powerful combination of compounds that have been shown to support prostate health. Tomatoes are also rich in anti-oxidants and turmeric has been shown to help reduce inflammation.

Here's what you'll need:

Ingredients:

  • 1 handful of organic tofu, cubed
  • 2 handfuls of broccoli florets
  • 1/2 cups cooked quinoa
  • 5-6 cherry tomatoes, halved
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tsp turmeric
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • (Optional: Add chopped almonds and/or currants)

Method:

  1. Prepare the quinoa according to the package instructions and set aside
  2. Sauté vegetables, heating olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add broccoli, stirring occasionally and cook until bright green and tender, about 3-4 minutes.
  4. Add the cubed tofu and cherry tomatoes to the pan. Cook for 5-7 minutes, allowing the tofu to become golden and the tomatoes to soften and release their juices.
  5. Sprinkle in the turmeric, lemon juice, salt and pepper. Stir to combine and cook for an additional 2 minutes to let the flavours come together.
  6. Plate the stir fry over a bed of cooked quinoa.

Enjoy this delicious, prostate-supportive meal, or if you're a female, a nutrient packed, good for your health dish!
